Good news: In the latest CafeTran Espresso 2019 with embedded Java, you can use the left ALT key to create ß, º, é etc., without having to restart CafeTran Espresso 2019 because the Alt+left and Alt+right keyboard shortcuts no longer work.

Note that the orange keys are 'dead keys' or overstrike characters: é, ñ etc.

After typing the Eszet via AltGr+s on a Mac, the Alt+left and Alt+right no longer work.
