In this new update, you need to click on the Dashboard menu button (in the same line with the language pairs) and make sure "Multiple document project" option is checked.

A few years ago. I suggested to "hold" updates - at least for the UI - for a year, okay, half a year. And miraculously, Igor sort of "obeyed." Those changes, however useful and logical, may make CafeTran impossible to use for beginners, and for people who write about CafeTran, Jean...

Keeping CT documentation up-to-date will be a real challenge...
I don't want to interfere with Igor's development style, as it must be one of the joys of creating software on your own (similar to being a freelance translator, so I can connect with that), but I agree it would be helpful if UI changes were kept (fewer and especially) far between. Introducing important UI changes no more than four times per year could be a nice rule of thumb (and compromise) in my book.
But this is maybe one of those times, I recall Igor has expressed an intention to focus on streamlining the program in terms of complexity for the user, and the recent Dashboard change seems to go in that direction.
Uncluttering the interface and hiding (secondary) options is one of the ways to achieve it, I guess.
OS X interface does it, and on Linux, Gnome desktop environment users have experienced it as well (for example, see the Human Interface Guidelines, and more specifically the Design principles).
As I have recently worked with a vanilla CafeTran installation for the documentation purposes, in general (although there is room for improvement, to be sure), the program uses sane defaults. New users could give an interesting perspective, in that respect.

On another note,the OpenOffice/LibreOffice workflow has been removed, I hadn't been able to properly test it, so does that mean Preferences (Options) > General > Applications connection: OpenOffice option is only there to connect the spellchecker now (Preferences > General > Spell checker: OpenOffice/LibreOffice)?
If yes, I'll update the reference document. Maybe these two items could be merged into one.

So can I, and I'd probably do the same. That doesn't mean it's good, though. Good for the users, I mean.

Not necessarily "new" users. I wouldn't call Elisabetta a "new" user anymore. And I've been looking for that "X" to close the DashBoard without quitting CafeTran. And I've been using CT for more than seven years.

Where can I re-import the bilingual files?

In Project > Export and exchange > Import bilingual document.
I think this step can save you a lot of work.
Previous version of modified segments will be placed as an Alternative translation (yellow background in the grid), so that you can compare. If you wish to remove these alternative translations, you can do so via the menu Task > Remove alternative translations.
Note: In your first tests, apart from keeping a copy of the unedited bilingual file around, as a precaution, I suggest you backup the project's folder, so that you can test the results safely.

is it possible to turn off the obfuscation of machine translated text introduced recently? It appears to mask everything that matches the non-translatables list, which is sometime counterproductive in my case.

CafeTran Espresso 2017 Yeddi update 27 is available for download. The update can be performed via Drag & Drop as follows:
1. Run CafeTran.
2. Download 20171114_update.zip file from here and place it on your desktop. Do not unzip or rename the file after downloading.
Note: On Mac OSX system, Safari web browser may unzip the file automatically after downloading it. To prevent it from occurring, right-click at the download link and choose "Download Linked File" command from the browser menu.
3. Run CafeTran and Drag & Drop the downloaded 20171114.zip file anywhere in CafeTran's initial screen - the Dashboard.
Alternatively, you can install 20171114_update.zip file via the "Install Update" button in the Help > About panel instead of dragging and dropping.
