If you wish to omit any part of text from translations, simply do not translate them. Then, such parts will be left untranslated. In this case, I guess, you wish to remove some part of source text. You can remove those parts either before you start the translation project (e.g. in Word) or put a space in the corresponding target segments when translating in CafeTran.

And see to it that you don't add those segments to your memory/ies by using the Arrow Right rather than Arrow Down (on a Mac: ^⌥→) to go to the next segment.
